Chicken Souvlaki Skewers

This is a simple way to get authentic Greek flavors at home. Using fresh oregano makes all the difference, and serving with grilled pita bread and homemade tzatziki sauce completes the experience.

3-4 boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
Juice of 1 lemon (+ zest of half)
¼ cup olive oil
2 teaspoons fresh oregano, chopped
½ teaspoon salt
½ teaspoon pepper

Marinate chicken in all ingredients for at least 1 hour. Skewer chicken pieces. Heat grill or grill pan to medium-high heat (if using outdoor grill, spray with cooking spray prior to heating). Grill chicken until cooked through and nicely browned, about 8 minutes per side.

Serve with grilled pita bread and tzatziki sauce (recipe below).

Tzatziki Sauce

Half of a large cucumber, peeled and diced
1½ cups plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon fresh dill, chopped
1 garlic clove, finely minced
½ teaspoon salt
½ teaspoon pepper
1 tablespoon fresh mint, chopped (if desired)

Combine all ingredients, and chill before serving.
