Chimichurri Sauce

Heighten the flavors of a holiday meal by drizzling this festive sauce over sliced steak, pork tenderloin or grilled chicken. A little goes a long way, so even the small amount this recipe makes is perfect for a dinner party of 10-12 guests.

½ cup fresh parsley, chopped
3 tablespoons red wine vinegar
4-5 garlic cloves, minced
2 tablespoons fresh oregano, chopped
2 teaspoons crushed red pepper
Salt and pepper, to taste
¼ cup olive oil

In a food processor, combine everything but the olive oil and process until smooth. Add the olive oil and process until mostly combined.

Let stand at least 20 minutes before serving at room temperature, or store in an airtight container for up to two weeks in the fridge.
