Dig in to this perfect summer snack! This version is more rustic and chunkier, but if you prefer a smoother texture, mix ingredients in a food processor until desired consistency. Serve as a dip with crispy tortilla chips or use as a garnish on homemade tacos or quesadillas.

Makes around 4 servings
3 ripe avocados, chopped
12 grape tomatoes, halved or quartered
1/2 cup red onion, chopped
1/2 – 1 fresh jalapeño, diced (seeds removed)
1/2 bunch fresh cilantro, roughly chopped
Juice of one lime
Salt and pepper to taste
Lightly stir together all ingredients, and serve.
