Parmesan Leek Pastry

Serve this savory recipe as a supper side dish or with a weekend brunch.

1 teaspoon olive oil
2 strips bacon
1 clove garlic, minced
1 leek, chopped and thoroughly washed
1 sheet puff pastry
1 egg, beaten
1 cup shredded Parmesan cheese

Heat oven to 400°F. In a pan, heat oil over medium heat, and add the bacon and garlic. Cook, stirring, until bacon starts to crisp, about 5-7 minutes. Transfer bacon to a cutting board and roughly chop. Place the chopped bacon and garlic mixture back into the pan, and add the leeks. Stir-fry until tender, about 4-5 minutes. On a parchment paper-lined baking sheet, spread the sheet of puff pastry and brush with the beaten egg. Spread the leek and bacon mixture over the pastry. Sprinkle Parmesan cheese evenly over the top. Bake for 15 minutes.
