Pear Recipes

Make use of fall pears with these canning recipes. Try the relish with crackers and cream cheese, and serve the honey over hot buttered biscuits.

Pear Relish
20-25 pears, peeled and sliced
2 green bell peppers
2 yellow bell peppers
2 red bell peppers
6 jalapeno peppers (with seeds for extra spice; without for milder flavor)
5 white onions
4 cups apple cider vinegar
4 cups sugar
1 Tablespoon turmeric
Dash of salt
1 Tablespoon pickling spice, wrapped in cheese cloth

Chop all vegetables in food processor. Put all ingredients in large stockpot, and bring to a full boil. Then simmer 15 to 20 minutes, stirring occasionally. Meanwhile, prepare 8-10 pint-sized canning jars by bringing jars and lids to a rolling boil. Remove pickling spice, and pour relish mixture into hot jars, and seal lids. Return jars to boiling water for 10 minutes. Set aside to cool.

Pear Honey
12-15 pears, peeled and sliced
16-ounce can of crushed pineapple
3 Tablespoons fresh lemon juice
10 cups sugar
Pectin

Puree fruits in food processor. Put all ingredients in large stockpot, and cook on high heat for 30-45 minutes, stirring often. If not thickened, add pectin to reach desired consistency. Meanwhile, prepare 8-10 pint-sized canning jars by bringing jars and lids to a rolling boil. Pour honey mixture into hot jars, and seal lids. Return jars to boiling water for 10 minutes. Set aside to cool.
